Spiced Nachos

This is a recipe that I created while at university many years ago. These Nachos are well loved by my family and friends. A warning- these Nachos are Spicy! If you are not a fan of spice then these Nachos are probably not for you. You can add to the spice if you want (I like adding jalapenos or hot sauce) or take the spice down a notch.  

You can make your own Salsa and Guacamole or use store bought ones that come in a jar. For a dinner party I make everything from scratch. But on a normal day, the salsa or guacamole is store bought.

I use New Zealand Prime Beef Mince but you can use whatever minces you like. I have made this recipe with lamb and pork mince for non-beef eaters and with chicken mince for non-red meat eaters. It tastes just as good 🙂 (you could opt to make this vegetarian if you wish)

Ingredients

  • oil, 1 tablespoon
  • onion, 1, finely chopped
  • red chilli, 2, finely sliced (or 2 teaspoons chilli powder)
  • garlic, 2 teaspoons, grated
  • ginger, 1 teaspoon, grated
  • mixed herbs/oregano, 2 teaspoons
  • ground cumin, 2 teaspoons
  • paprika, 1 teaspoon
  • ground coriander, 1 teaspoon
  • beef mince, 500g (or lamb/pork/chicken mince)
  • diced tomatoes, 1 can
  • kidney beans, 1 can (or 1 can of your favourite chilli beans – I used Watties hot chilli beans today)
  • salt, to taste
  • pepper, to taste
  • corn chips, 1 pack
  • grated cheese

Optional

  • sour cream
  • guacamole
  • salsa
  • jalapenos
  • hot sauce

Cooking Method

  1. Heat oil in a large frying pan on medium. Sauté onion, ginger and garlic. Cook till translucent. Add spices and cook for 1 minute, until fragrant.
  2. Increase heat to high. Add mince and brown well, 5-10 minutes, breaking up lumps as it cooks.
  3. Stir in tomato and beans. Simmer, for 10 minutes. Add salt, pepper and herbs. Simmer, stirring occasionally, for a further 10 minutes until sauce is thick.
  4. Arrange mince and corn chips on a plate. Sprinkle with grated cheese to taste. Microwave for 1 minute, until the cheese melts. Serve accompanied with sour cream, guacamole and salsa. (If you prefer you can arrange the beef and corn chips in an oven proof dish, sprinkle with grated cheese and place it in the oven for 5 to 10 minutes. – I prefer the microwave simply because its quick)
